What we do
Auréole makes small-release estate wines on high, sun-facing terraces: picked by hand at the golden hour, pressed gently and cellared until each vintage has earned its label.
Pick at the golden hour. We harvest only when the skins turn amber and the sugars peak, then press within the hour.
Ferment without hurry. Wild yeasts, open oak and long, cool ferments give every cuvée its depth and calm.
Release when ready. Each vintage rests in the cellar until it has earned its label. Some wait a decade.

Each vintage is released once, in numbered bottles — from the first pour to the last case.
